拌核桃仁:食材:核桃、白酱油、苦菊。做法:核桃砸开外壳剥出核桃肉,放到开水浸泡十几分钟剥掉核桃肉上的薄皮。苦菊择洗干净掰成小段,把核桃肉、苦菊盛到盘子里调入白酱油拌匀腌5分钟。

鱼香凉拌茄子:食材:长茄子200g、油30g、精盐1/2茶匙、小葱2棵、红干椒10个、大蒜1头、香菜2棵、花椒1茶匙、陈醋15g、生抽15g、香油1茶匙、白糖1.5茶匙。

做法:茄子洗净后入笼屉蒸熟,晾凉后稍微攥掉水分撕成条,撒上香菜、蒜粒。白糖、生抽、香油、白糖调匀成酸甜味汁。炒锅里倒入油放入小葱段、干辣椒段、花椒粒大火爆香成香辣油。趁热浇在蒜粒上激出香味,最后浇上酸甜味汁拌匀。

凉拌花生米:食材:鲜花生300g、白酱油1茶匙、葱白1大段。做法:把花生米入开水焯烫去掉青涩味道,捞出控水。洒上葱白丝,调入白酱油。拌匀后腌渍十多分钟入味后,口感清脆、甜咸用来下酒很搭。

凉拌黄瓜黑木耳:食材:黑木耳、精盐1/4茶匙、黄瓜1根、白糖1/茶匙、陈醋1茶匙、生抽1.5茶匙、红辣椒适量

做法:黑木耳用温水泡软开水焯烫。红辣椒剁碎,调进白糖、精盐,倒进陈醋、生抽拌匀成味汁。黄瓜洗净后拍散切成小段。把处理好的黄瓜黑木耳盛到小碗里,浇进调好的味汁拌匀,腌渍10分钟入味。

凉拌葱油藕片:藕、香葱、油、盐、花椒、生姜、白醋、白糖做法:香葱择洗干净后切碎,生姜切丝。把白醋,调入精盐、白糖搅拌成酸甜味汁备用。藕去皮洗净后切成薄片,切好的藕片用清水浸泡淘洗掉淀粉后入开水锅焯烫至断生,焯烫好的藕片用凉白开水冲泡后捞出控净水,调入兑好的酸甜味汁拌匀。炒锅里倒入油放入花椒、生姜丝、香葱,开大火爆出香味。趁热把炒好的葱香油浇在藕片上,拌匀。

水晶猪皮冻:食材:猪皮750g、生姜1小块、精盐1茶匙做法:把猪皮择洗干净后煮到用筷子能轻松穿透后捞出,把猪皮内侧的油脂刮干净。把猪皮清理干净后切成细条,用开水再煮一次底清除掉油脂。猪皮煮好后放进砂锅,放进生姜去腥,撒入精盐,添进足量的清水。大火煮开后改用小火煮40分钟左右,一直煮到汤汁稍粘稠。煮好的猪皮汤汁放凉后盛到干净的容器里,盖上保鲜膜放进冰箱冷藏3小时。
